There's a notation about it in the introduction above the wineries list.&lt;/p&gt;&lt;p&gt;Google Maps only allows a limited number of places on a single map page, so I had to split the wineries, and north-south seemed the most reasonable, especially since I can't control the break. Google has another map product called Maps Engine and I'm looking into it to see if it will work better.&lt;/p&gt;&lt;p&gt;Please let me know if you are aware of any wineries that are missing from the map or if you find any incorrect information. I was involved with a very successful restaurant start-up, too. And my first and primary reaction to all you've written David (which was excellent in its detail to all aspects of pouring by the glass) is that I don't "get" why restaurants generally feel the need to set wine pricing - by the bottle or by the glass - on a percentage or ratio basis.&lt;/p&gt;&lt;p&gt;Almost all the costs of wine service at a restaurant - the storage space, the glassware investment and replacement costs, the time required of staff and management to select a wine list and more to serve the wine - all these costs are fixed per bottle. It does not cost more to store a bottle of wine that costs 75 or even 150 nis any more than it costs to store and serve a bottle of wine that costs 25 NIS. So why do restaurants almost always use a fixed % markup for both the bottles on the list and the wines poured by the glass? The formula I was given in the US fro wine list pricing was a 175%-200% markup over wholesale cost of the bottle. So a 25 NIS bottle would go for 65-75 NIS on a restaurant list by that formula, and a 100 NIS wholesale cost bottle would be priced at 175 - 200 NIS.&lt;/p&gt;&lt;p&gt;But - and I had tremendous success with this policy - if a restaurant is "happy" to sell the 25 NIS bottle for 75 NIS, why not sell the 100 NIS bottle for 150 and make the same amount of net profit on the bottle? The only cost of "service" that is higher for the more expensive bottle is the time value of money related to the initial purchase of the more expensive bottle, the "investment" cost. But if a restaurant starts to sell 100 NIS wholesale cost bottles for only 150 on their wine list, and the food is at a level that attracts sophisticated clients who would LIKE to drinker top shelf, the "expensive" wines start to fly out the door. And the sophisticated customers walk out the door more happy and share their good experience with friends...&lt;/p&gt;&lt;p&gt;The same argument applies to wines by the glass too, except for the concern of bottles not being consumed before some tiredness creeps into the wine. For that we have vacuvin system stoppers or N2 gassing of opened bottles (cruvinet or its like in the best scenarios) and if the markup per glass is flat/fixed per bottle rather than %, you can bet the more expensive wines BTG wlil start to fly, as well.&lt;/p&gt;&lt;p&gt;It's a good thing to be known as a "high value" establishment and an even better thing to sell lots of high end wines and send customers home buzzing (via talkative positive response) about what a great wine (and therefore great time) they had at your restaurant.&lt;/p&gt;&lt;p&gt;That's several thousand NIS worth of consulting advice for free, restaurateurs...
